	 &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp;<a href="http://www.chefming.cn/attachment//1203110586_0.jpg" target="_blank"><img src="http://www.chefming.cn/attachment//1203110586_0.jpg" class="insertimage" alt="点击在新窗口中浏览此图片" title="点击在新窗口中浏览此图片" border="0"/></a><br/> &nbsp; &nbsp;半月前的一天，突然不知哪里来的灵感，要把Cheese Mousse装到一个锥形的器皿里，可是苦于没有合适的器皿，只好在一次重要宴会上用Cold Cuts做成锥状，把慕司灌在里面，但是挺不住，又没有合适的支架，苦恼了好几天。突然想起冰淇淋蛋卷，Cheese Mousse配上甜甜的蛋卷，整个一个“甜品”，真是天作之合！可惜支架始终没有解决，直到最后时刻也没有合适的，只能做好一个简易的备用。皇天不负有心人，最后时刻，Michael买来的一个大型玻璃漏盘，本来是用在即将投入使用的Royal Club，摆在宴会中央，他自己也找不到合适的东西装？恰好给Chef Ming的"Cheese Ice Cream"派上了用场！将近一年没有动刀雕刻了，本来刻一个瓜雕，是想将当年的大型果盘“旧戏重演”，这下有了搭档！<br/> &nbsp;是不是可以以假乱真呢？果然很多人奔着“奶酪冰淇淋”去了！哈哈，全都上当了！Chef Ming这场酒会上，有五个冷菜作品做成了“甜品”的形式！<br/> &nbsp;要想知道，Chef Ming葫芦里卖的什么药？Cheese Mousse是如何做的？暂时保留一下可以吗？这个秘密将保留在本人的新书《话说奶酪》里揭晓！<br/> &nbsp; &nbsp; &nbsp; &nbsp; <a href="http://www.chefming.cn/attachment//1203110587_1.jpg" target="_blank"><img src="http://www.chefming.cn/attachment//1203110587_1.jpg" class="insertimage" alt="点击在新窗口中浏览此图片" title="点击在新窗口中浏览此图片" border="0"/></a>

	 &nbsp; &nbsp; &nbsp;将近两个月的宁静，好久都没有亲手做菜了，总算有机会了。客户要求意大利菜Set Menu，这里的特点是多多益善，那只好这样了。其实Chef Ming更喜欢让盘子里更清晰一些，但是没有办法，人家花钱要感觉实惠。<br/> &nbsp; &nbsp; &nbsp;以前Chef Ming的文字中对Antipasto有过简单的介绍，这里再 给大家讲解一下。Antipasto是意大利语中 “before the meal”的意思，也就是我们通常所说的“ 头盘”，主菜前面的“开胃菜”。(anti = before, pasto = meal). 英语通常称作Appetizer，也称作Starter；相当于法语当中的Hors d’œuvre。<br/> &nbsp; &nbsp; &nbsp;按照意大利语中的复数变化规则，Antipasto的复数形式就是Antipasti。如同英语的Appetizers当中加了s一样。大家如果有机会读到法语的菜单，可以顺便了解一下。hors d’œuvre在法语和美式英语当中即便是复数hors d’œuvre后面也不加s，只有英式英语要加的。因为这个词已经作为外来语被英语所接受了，许多英语菜单上会直接使用hors d’œuvre这个词。<br/> &nbsp; &nbsp; &nbsp;另外，意大利语当中还有词“性”变化，要分为阴阳性的。有时你会见到Antipasta一词，那就是对Antipasto的“美女”称呼。哈哈，是不是一时转不过弯来？没有办法，学做厨师，特别是一个International Chef，必须有这些知识哦!要超过Chef Ming的兄弟们，这一点可是你们的最大课题啦，Chef Ming的英文可是有Master水平的，同时阿拉伯语在埃及可以乱真的，意大利语，法语和德语的专业用语都有接触。<br/> &nbsp; &nbsp; &nbsp;至于Misto是意大利语“混合”一词的意思。Misti是根据前面Antipasti的变化而变化的。幸好不是给意大利人写的菜单，不让要全部使用意大利语，一个绝对挑战，也是一个绝好的学习机会。<br/> &nbsp; &nbsp; &nbsp;好了，这里只是顺便给大家一点课外知识，专业厨师需要了解，将来Chef Ming有机会出版专业的烹饪用语翻译词典中，会详细介绍。非专业人士，了解一下也无妨，有机会到国外的西餐厅点菜，肯定会用的上。<br/><br/> &nbsp; &nbsp; &nbsp;提醒大家一下，只要时间来得及，一定要把菜品做细。因为，从你手里出来的东西，就有你的品牌。Chef Ming通常对下面的员工讲，这叫作你的Trade Mark--商标。<br/> &nbsp; &nbsp; &nbsp;这道菜，Chef Ming只是给他们设计样盘，操作要大家一起动手的。<br/> <p align="center">Antipasti Misti<br/>Smoked Salmon with Dill Mustard<br/>Citrus Flavored Shrimps<br/>Buffalo Mozzarella & Roman Tomato with Pesto Sauce<br/>Stuffed Baby Artichoke Heart with Chicken & Sun-dried Tomato Salad<br/>“Trio di Pepe” Grilled Three Colors of Capsicums with Oregano<br/>Rainbow Salad in Parmesan Cup</p><br/><a href="http://www.chefming.cn/attachment//antipasti+1.jpg" target="_blank"><img src="http://www.chefming.cn/attachment//antipasti+1.jpg" class="insertimage" alt="点击在新窗口中浏览此图片" title="点击在新窗口中浏览此图片" border="0"/></a><br/> &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; &nbsp; <a href="http://www.chefming.cn/attachment//antipasti+2.jpg" target="_blank"><img src="http://www.chefming.cn/attachment//antipasti+2.jpg" class="insertimage" alt="点击在新窗口中浏览此图片" title="点击在新窗口中浏览此图片" border="0"/></a>
